Grilled Eggplant Salads - 2 Ways

As far as I'm concerned summer is here at last. It is time to dish out the fresh produce and make loads and loads of yummy salads.


Eggplants are one of my favourites and it is currently at it's prime.
It has a meaty texture and a rich complex flavour. It is a great alternative for meat.

Slice down the length of the eggplant.
Brush olive oil on both sides; sprinkle cracked pepper and salt before grilling.

I like them grilled and having them with tomatoes.

I would like to share two versions of my eggplant salad with all of you vegetarians or carnivores out there.

When it comes to salad --- be creative. Make sure you have got a good contrast of colour and that the  flavours go well together and have a combination of texture. Because eggplants have a rich and complex flavour, contrast them with bold dressings like aged balsamic or balsamic reductions and a drizzle of good NZ extra virgin olive oil plus seasoning.

Now go out there, make heaps of salads and enjoy your meals outdoor!
